I am a head chef with classical training and enough charter seasons behind me to know that calm structure matters as much as creativity. I enjoy Mediterranean cooking, Asian influences, clean provisioning, and adapting menus without turning the galley upside down. My aim is to keep guest service precise, crew food cared for, and the galley composed even when the day changes three times.
